What is the function of iodine solution?Iodine solution act as indicator to test the presence of starch in a solution tested.
Explain why starch turned blue when reacted with iodine.Starch turned blue when reacted with iodine because iodine molecules assemble in the coils of beta amylose molecules in starch. Amylose molecules is a soluble starch.
Provide the relationship between substrate concentration and enzyme reaction.The substrate concentration affects the enzyme reaction. As the substrate concentration is higher, the enzyme reaction rate become independent of substrate concentration; that is, the rate is zeroth order with respect to substrate. The higher substrate concentration, the lower enzyme reaction rate.

What is Km?Km is the concentration of substrate which permits the enzyme to achieve half Vmax. Km also defined as the measure of the substrate concentration required for effective catalysis to occur.
What is Vmax?Vmax is the maximal velocity of a reaction which occurs at high substrate concentrations when the enzyme is saturated.
Conclude the effect of temperature on the production using amylase.The effect of temperature on the production using amylase are monitored by changing of temperature of amylase and starch. The temperature ranges over which enzymes shows activity is limited between the melting point (0 degree celcius) and the boiling point (100 degree celcius) of water. The production is higher when the temperature is optimum for certain concentration of starch.
